If you’d like a soft cheese with a nice bite to it, you cannot go wrong with Gorgonzola. This semi-firm cheese is made from unskimmed cow’s milk, and features beautiful blue marbling. Melted into a cream sauce, Gorgonzola makes a delicious accompaniment to gnocchi.
