Fat Tuesday, the holiday traditionally known as Mardi Gras, is all about the food. And all around the nation, chefs and food enthusiasts compete to devise their own Mardi-Gras-inspired dishes that both delight and mystify the palate.

A native of New Orleans, this better burger is the brainchild of P.J. Haines, owner of the Food Drunk.
