Italy is known worldwide for its pizza and pasta. But these dishes feature an ingredient that is also remarkable by itself: cheese. Come on a culinary trip through Italy, from north to south. While you are there, you will learn of the greatest cheeses of Italy, from the soft, biting Gorgonzola to the hard, enigmatic Parmigiano-Reggiano and even the spicy Maiorchino.

1. Gorgonzola, Milan

If you’d like a soft cheese with a nice bite to it, you cannot go wrong with Gorgonzola. This semi-firm cheese is made from unskimmed cow’s milk, and features beautiful blue marbling. Melted into a cream sauce, Gorgonzola makes a delicious accompaniment to gnocchi.
