8. Pecorino Romano, Sardinia

On the island of Sardinia, you will find a fantastically sharp, salty cheese. Pecorino Romano was a staple in the diet of people in ancient Rome. It is made exclusively from sheep’s milk and lamb rennet paste, which makes it very aromatic. The uses for Pecorino Romano are similar to Parmigiano-Reggiano, but the time it must age is shorter.
