This cheese, which can be made from either raw or pasteurized milk, is only derived from hay-fed or grass-fed animals. As a result, you get a wonderfully complex, nutty flavor that can be served either soft or hard. When it is fresh, you will find it great for a grilled-cheese sandwich.
